Sugar Pie - Tarte au Sucre

A traditional Quebec recipe that has many variations, though one fact remains: sugar pie is best served warm.

What differences exist between the various versions?
Sometimes the cream is replaced with milk and enriched with 50 g (3 tbsp.) butter and an egg. Other times, 125 ml (1/2 c.) of chopped walnuts are added to the filling before it is poured into the crust.

Ingredients

500 ml (2 c.) brown sugar 250 ml (1 c.) heavy cream (35%) 3 tbsp. flour 1 unbaked pie shell

Preparation

# In a small saucepan, combine the sugar with the cream until dissolved;
# add the flour and let simmer for a few minutes until the mixture thickens;
# pour into a pie shell;
# bake at 180° C (350° F) for about 20 minutes; remove from the oven; let cool until just warm and serve.
